School Lunches

The report “Hungry for Success: a Whole School Approach to School Meals in Scotland” and the consequent “Scottish Nutrient Standards for School Lunches” have had a significant effect on school lunches.

In primary schools, a three-course lunch is available to all children. Children can select homemade soup, choose from two main courses including a vegetarian option, and have a choice of two sweets. Sweet choices include fresh fruit, yogurt or a fruit based hot pudding (winter only). A selection of fresh bread and water or milk is available every day and is included with the meal.

We operate a summer menu cycle, which runs from after the Easter break until the October holiday, and a winter menu cycle, which runs from October to Easter. Within each seasonal menu, a four-week menu cycle operates.

Since August 2005, all primary and special school lunches have been produced centrally using a cook freeze system. In this production system, food is produced in batches, rapidly cooled and frozen, to preserve flavour and vitamin content, then transported to each primary school to be finished and served. Food is served from multi-portion dishes in much the same way as it has always been. Salads and fruit are still freshly prepared in every school.

By adopting the cook freeze production method, we have been able to improve the quality of food provided to schools. The system is also extremely good in terms of food safety, portion and cost control. Efficient management of the production system means more funding can go into the food.

Of course, the food served will only be as good as the recipes used and the ingredients that go into them. The Council constantly reviews raw ingredients and recipes. Where possible, the Council tries to source produce locally and plans to put together a “tasting panel” of pupils to check out new recipes.
